Two Oyster Shooters will start the night. One classic and one unique prepared with Island Creek Oysters, Revelton Vodka, horseradish and seaweed caviar.
The Oysters:
Half Dozen Island Creek Oysters on the half shell. We will be shucking real time and plating as we go. These oysters are so amazing you can eat them plain and taste the salty briny ocean or fix them up with Lemon, seaweed caviar, Tabasco or a lemon wedge.
The Champagne:
Fantastic French Cuvée Vollereaux Tradition Millésime 2014, which is made from Chardonnay 50 %, Pinot Noir 25 % and Pinot Meunier 25 %. This Semi-Dry Vintage Juggernaut will surely tickle your taste buds.
The Brisket:
Dry rubbed with Salt and Pepper and slow cooked for 24 hours. It will then be cold smoked for 5 hours with an additional rub of secret spices to create a crispy bark. Once carved we will build your dream sandwich with refreshing slaw and a light flavorful BBQ sauce.
The Cider:
Sidra Seco is F&S’s medium dry Spanish style cider. Fermented with a designer yeast made specifically for this product and aged 6 months. This very light refreshing cider is the perfect thirst quencher for smoked brisket.
The Chocolate:
Flourless Italian chocolate torte: Served with raspberry sauce, powdered sugar, whipped cream, fresh berries, and a sprig of mint.
The Scotch:
Kilchoman 2009 vintage. This scotch is absolute magic.This comes from Clint’s private stash, and we feel it is the correct pairing for the occasion. Established in 2005, Kilchoman (pronounced Kil-ho-man) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman was the first distillery to be built on the island for 125 years. This particular bottle is the first eight year old general release and has been matured in a combination of oloroso sherry butts and bourbon barrels and bottled in 2017.
